130 g chickpeas (glass / can)
130 g broccoli
75 g red pepper
70 g carrot
30 g onion
50 ml coconut milk, unsweetened
50 ml coconut milk, creamy
100 ml vegetable broth
10 ml of oil
10 g red curry paste
10 g cashew nuts
Salt pepper

How to do it:

  1. Put the chickpeas in a colander, rinse and drain well. Clean
    the broccoli and cut into small florets. Peel the carrot and cut
    into thin slices . Peel the onion and cut into fine strips. Wash
    and dice peppers. Roughly chop the cashew nuts.
  2. Heat the oil in a pan or saucepan. Add onions, peppers and
    carrots and fry briefly. Add the curry paste and vegetable stock
    and stir well. With the lid closed, simmer gently for about 5
  3. Add the chickpeas and broccoli, deglaze with the vegetable
    stock and coconut milk and simmer for another 5 minutes with
    the lid closed.
  4. Finally, sprinkle with the chopped cashew nuts and, if
    necessary, season again with a little salt and pepper.
