Ingredients for 1 serving
400 g mushrooms
70 g rocket
10 g fresh parsley, chopped
3 g fresh garlic
100 ml vegetable broth
20 ml white balsamic vinegar
10ml lemon juice
15 ml of olive oil
1-2 drops of liquid sweetener
Preparation time: approx. 25 minutes
Portion size: 1 serving
How to do it:
- Wash the rocket and spin dry. Peel garlic and chop finely.
- Clean the mushrooms and cut in half or quarter , depending
on the size.
- Heat 10 ml of oil in a pan. Fry the mushrooms together with
the garlic until golden brown. Season with salt and pepper, add
the broth, the rest of the oil, vinegar, sweetener and lemon
juice, stir well and place in a bowl.
- Stir in the chopped parsley and rocket, season to taste again
