Ingredients for 1 serving
130 g chickpeas (glass / can)
120 g carrot
60 g cucumber
60g avocado
40 g onion
5 g red chilli pepper
5 g green chilli pepper
5 g fresh coriander
5 g fresh garlic
10 g coconut oil
10 ml lime juice
5 g agave syrup
10 g sesame seeds
1 pinch of curry powder
1 pinch of ground cumin

Portion size: 1 serving
This is how it’s done:

  1. Peel the carrot and cut into fine strips. Halve the cucumber
    and cut into thin slices. Also cut the avocado pulp into
    slices. Peel and finely dice the onion, finely chop the chilli and
    garlic, coarsely chop the coriander . Rinse and drain the
    chickpeas well.
  2. Heat the coconut oil in a pan. Add the chickpeas and fry
    them over a high heat, stirring constantly. Then reduce the
    temperature to medium heat and add onions , carrots, chilli and
    garlic. Stir well and fry evenly for about 2-3 minutes.
  3. Now drizzle with the honey and season with salt, pepper,
    cumin and curry. Mix well and let the honey slowly
    caramelize. Fold in the cucumber and avocado and season with
    the lime juice.
  4. Place on a plate, sprinkle with the coriander and sesame
    seeds and enjoy.
