200 g carrot
200g giant white beans (can)
150 g parsnips
100 g cherry tomatoes
50 g onion
15 g spring onions
5 g fresh parsley
500 ml vegetable broth
10 ml of olive oil
Salt pepper

How to do it:

  1. Peel and dice the onion. Peel the carrots and parsnips and
    cut into thin slices. Wash tomatoes. Clean the spring onion and
    cut into fine rings. Finely chop p etersilie. Rinse the beans
    thoroughly and let them drain well.
  2. Heat the oil in a saucepan and sweat the onion in it until
    translucent. Add the tomatoes, spring onions, carrots and
    parsnips and sauté briefly. Deglaze with the vegetable stock and
    simmer gently for about 10 minutes with the lid closed.
  3. Add the beans, stir well and season with salt and
    pepper. Simmer for another 2-3 minutes until the beans are hot.
  4. Place on a plate, sprinkle with the chopped parsley and
